The Côtes de Provence isn’t just for rosé – this blend of Rolle and Ugni is fresh, zesty and perfect for summer. Château Peyrassol’s vineyard history stretches back to 1204 and the Knights Templar, so we knew they’d be a great fit when we were searching for a wine that truly reflects the region. Their organic vineyards are nestled in 850 hectares of unspoiled nature and forest at the foothills of the Massif des Maures – making the most of the region’s clay-limestone soils. Fabien Burani, who has spent his entire professional career in Provence, manages the development of Peyrassol’s wines, accompanied by Pierre Guérin for this beautifully crisp white wines. Light and citrusy, this wine is ideal as an aperitif – or pair it with smoked salmon and fromage frais.
